
Let's make some gluten free, dairy free, and corn free Rice Krispy Bars. Do you like Rice Krispy Bars covered in chocolate, but have food allergies? Our allergy friendly Cocoa Crispy Bars are an easy and fast snack recipe for kids. And our club's recipe is free from the top eight allergens.
Last year Mum and I were rooting around in the presses (in Ireland we call our cabinets presses) and we were quite surprised to find them pretty empty!
I said to her, "Wouldn't it be really grand if we could make up something that only uses a few ingredients?"
Mum laughed and said, "That would be great Cilie if we used cereal, because that's just about all we've got left in here!"
Then my little brother Ronan, who's usually a pain in my pajamas most days, says to us, "I want Cho-co-LATE!"
So that is pretty much how this recipe got started.
Boys and girls, this yummy recipe has been voted as our family's number 1 favorite treat because it is so easy to make and is ready in just half-an-hour!
Dessie and I spend only about 15 minutes with Mum mixing up our own homemade fluff and melting the chocolate chips in the microwave. Of course, you can melt them any way you'd like. You don't need a microwave to do it. When we were done little, Ronan just had to lick the spoon afterward. We decided to let him do it to keep the peace while we finished up. The rest is so easy! You just spread the chocolate and then smash the crispies on top. This is a great summer time recipe. You don't need a range or oven to make this dessert and it is ready in about 25 minutes as long as you have a freezer handy!
1 bag of Enjoy Life Chocolate chips (or any other allergy friendly brand that doesn't have gluten, dairy, or soy lethicin in it).
Psst! If you don't have any chocolate flavored crispy rice cereal just use more of the regular kind!1/3 cup of Palm Oil (it's a solid dairy free shortening that's made from palm trees).
2 cups Crispy Rice cereal (make sure your brand is gluten-free).
2 cups of Koala Crisp chocolate flavored cereal (or any other gluten and allergen-free brand).
1/2 cup of rice syrup
Ask an adult helper to melt the chocolate in the microwave. That will take about 5 minutes. Be careful because the bowl gets very hot! For best results the chocolate should be stirred once every couple of minutes. While one person is doing that, the other one needs to mix the spectrum palm oil and rice syrup together with a hand mixer in a bowl.
This is pretty easy to do as long as you hold on with BOTH hands while you mix!
It also works best on medium speed.
If you go too high things might get a bit crazy for you!
Do this until it is smooth and creamy.
This only takes about a minute.
Psst! By the way, Spectrum shortening is made from palm oil and is dairy free. 
Spread the bottom of a 9x13 silicone baking sheet with the melted chocolate.
In another bowl add all remaining ingredients.
Stir with a spoon until well mixed.
Pour the mixture over the chocolate and press down until the crispy mix is well packed.
Freeze the sheet for at least 20 minutes.
Longer is even better if you have the time.
When the treat is good and frozen cut into little squares with a butter knife or a 'pizza wheel'. Eat and enjoy!
